1 pound mushrooms, stems trimmed, caps wiped clean

4 cups reduced-sodium chicken broth
1 cup thinly sliced carrots, (1 large)
1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried
2 bay leaves
2 pounds boneless, skinless chicken thighs, trimmed and cut in 2-inch chunks
2 1/4-inch-thick lemon slices, (including peel), seeded
1/2 teaspoon freshly grated lemon zest
2 tablespoons cornstarch
1/4 cup whipping cream
2 tablespoons lemon juice
1/2 teaspoon salt
Freshly ground pepper, to taste
1 1/2 cups frozen green peas, rinsed under cold water to thaw
1/2 cup chopped fresh parsley
