1 pound steamed fish, flaked
2 eggs, beaten
4 tablespoons flour
1/2 cup coconut milk
1 small handful of coriander, chopped
1/2 pound fresh corn kernels (about 2 cups)
6 8 scallions, finely chopped
1 2 cloves garlic, crushed
1 fresh chili, chopped (optional)
Sea salt and freshly ground black pepper
1 cup flour, lightly seasoned, for coating
Sunflower or canola oil for frying
For serving:
Limes or lemons
Sweet potato and watercress puree
Sweet chili sauce
