1/2 cup chopped shallots (about 4 oz.)
2 tablespoons fresh thyme leaves or 1 tablespoon dried thyme
1 tablespoon chopped italian parsley
About 1/2 teaspoon salt
About 1/4 teaspoon pepper
2 cups cabernet sauvignon or other dry red wine
3 cups fat-skimmed low-sodium beef broth
1/2 cup (1/4 lb.) plus 1 tablespoon butter or margarine
1/4 cup chopped fresh mint leaves
1 3/4 pounds yukon gold or russet potatoes, peeled and cut into 1 1/2-inch chunks
1/2 cup whipping cream
