Whether your kids are heading to summer camp or you're getting prepared for back-to-school season, get ready to level up your breakfast game! Ditch the sugary cereal and pre-packaged breakfast pastries for these simple, wholesome, kid-approved recipes instead.

1. Taco 'bout a great breakfast

Tacos aren't just for Tuesday dinner. Create a breakfast version with your kids' favorite ingredients. Start by stuffing a soft tortilla with scrambled eggs, then add cooked bacon, crumbled sausage, shredded cheese, veggies, jarred salsa, or guacamole. Whatever your kids love!  Make a big breakfast batch for the freezer by rolling the same ingredients into a tortilla like a burrito. Fold in the ends of the tortilla, roll tightly, then store in plastic wrap in your freezer. Your kiddos can grab one and reheat it in the microwave in just a few minutes for a quick, delicious breakfast. 

2. These pancakes are bananas!

For something a little sweeter, get your griddle on. Add some extra nutrients to your standard pancake recipe (or your favorite boxed mix) by adding a mashed banana or two to the batter. You'll get a fluffy texture and mild flavor that even the pickiest eaters won't mind. Serve them with fresh berries and maple syrup for a seriously sweet and fiber-filled breakfast that will power them through recess. If you have any leftover pancakes, throw them in the freezer with a piece of wax paper separating each for easy reheating. 

3. A two-bite breakfast

Do you or your kiddo love those mini egg bites from your coffee drive-through runs? Luckily, it's pretty easy to make a similar version at home with a basic muffin tin. Coat the tin with nonstick cooking spray, then fill each slot with shredded cheese, your favorite breakfast meat, or leftover veggies from dinner. Try these ingredient combos:

  • Diced ham and shredded Swiss or Gruyere cheese
  • Crumbled feta cheese, spinach, and diced tomato
  • Crumbled pre-cooked sausage with sliced bell peppers and onions
  • Tomato salsa, diced jalapenos, shredded Mexican cheese

Then, whisk 6 eggs together with salt, pepper, and a splash of milk and pour over each slot. (As a general rule, use one egg for every two muffin slots. So, if your tin has a dozen slots, you'll need 6 eggs). Breakfast bonus: These egg bites also freeze well and are perfect for an on-the-go breakfast.
