  • 4 ripe bananas
  • 2/3 cup oil

  • 3 cups almond flour, or 1 ½ cups of almond flour and 1 ½ cups of cake flour

Method:

  1. Preheat your oven to 350 °F (180 °C).
  2. Line three 6-inch cake tins with baking paper.
  3. Mash bananas with the oil.
  4. Mix in the baking soda and salt.
  5. Stir in the apple puree, beaten eggs, and vanilla extract.

Handy tip: Use a stick blender or immersion blender to combine all the ingredients thoroughly and make the mixture light and fluffy.

    6. Add in the flour and stir to combine.

    7. Pour the batter into the prepared cake tins and place them in the oven.

    8. Bake for 30 minutes or until the sponges spring back to the touch.
